We had spinach pesto tonight. I made the pesto on Sunday morning. Then I put it into ice cube trays and frozen it.
It was awesome to open the freezer, pop out a few pesto cubes, wait for them to thaw out, cook some pasta and toss them together! Dinner done. And it was homemade pesto! With CSA spinach!
Here is the recipe: ( I had to triple this recipe to use all my spinach)
2 cups lightly packed spinach
1/4 cup lightly toasted pine nuts (or walnuts)
1-2 teaspoons grated lemon peel
2 tablespoons lemon juice
1/3 cup evoo (Extra Virgin Olive Oil)
salt and pepper
1/3 parmesan cheese
Combine the spinach, pine nuts, lemon peel and lemon juice in a food processor. Pulse until slightly combine. Pour olive oil and combine until creamy.
Spoon into ice cube trays and freeze.
When ready to use, just pop out, thaw, mix in parmesan cheese and salt/pepper if needed.
